The Mexico MX RFA Strictly High Grown Kassandra SPC offers a refined balance of ripe cherry, dark chocolate, and toasted hazelnut notes, delivering an elegant and complex cup. Finca Kassandra, located in Córdoba, Veracruz, has been producing estate-quality coffee since 1990. Originally a cattle station, the farm was transformed by the Rivas family into a thriving coffee estate, complete with its own dry mill by 2003. The family’s commitment goes far beyond coffee - 27 hectares of rainforest have been set aside for local birds and wildlife, alongside an extensive tree-planting program designed to support both biodiversity and the coffee ecosystem. Their meticulous approach of handpicking ripe cherries, careful processing, and state-of-the-art grading shines through in every cup. Di Bartoli recommends brewing this coffee either as a pourover filter (using 15g water at 92–94°C for every 1g medium ground coffee) or espresso (18–20g dry coffee in, approx. 40–45mL out at 92–94°C). While best appreciated black to highlight its complexity, this coffee also pairs beautifully with milk for a richer chocolate-hazelnut profile.
